Breakfast Cookies

Super easy grain to start with- oats!
Oats can provide an easy, accessible way to get whole grains and all the benefits into your diet. Oatmeal for breakfast is standard in our house, but these oatmeal cookies make it more fun and a great grab-and-go breakfast or super healthy snack!

I present Oatmeal Pumpkin breakfast cookies*!
*For kids, call these cookies. For Adults? They are homemade Breakfast bars.

1 Can Pumpkin (not pie filling!)
1 Can Full of oats (approx 2 Cups) (I use quick- you can use old fashioned, just let it sit longer)
1/4 Cup brown sugar or, You can use maple syrup for sugar, but will need to up the dry ingredients
1/8 Cup Wheat germ
1/8 Cup flax seeds
1/4 Cup raisins

Mix together. Let sit at least 15 minuets, or toss it in the fridge overnight. Make balls and flatten them into cookie shapes (or bar shapes!). Bake at 350 for about 15 minuets.
